Honey is a living food, rich in enzymes, vitamins and minerals. However, contact with certain metals can alter its properties and taste. Wood, being a neutral material, preserves the integrity of the honey and does not interfere with its subtle flavor.
Hard woods are ideal for honey because they do not absorb moisture from the honey, and they are more durable and less likely to splinter. It is best to hand-wash wooden spoons and dry thoroughly after each use.
