Product of Canada

These are whole Red Fife Wheat berries. Performs similarly to and can be used in place of modern Hard Red Winter wheat.

Heirloom Red Fife wheat boasts exceptional flavor and baking properties while remaining un-altered by modern genetic modification.

Named after David Fife, the seed came from Scotland in 1842 and is believed to be a relative of Halychanka Wheat, a Ukrainian Heritage wheat.

Red Fife has been resurrected by a number of faithful organic heritage wheat farmers mostly here in Canada. Red Fife seed is being actively preserved and protected as a Heritage/Heirloom variety. Although it is the foundation of many modern hybrid wheat varieties this wheat has itself not undergone the hybridization of modern wheats. It is thought that mass hybridization of modern wheat has changed the protein structure of wheat leading to the increased cases of gluten sensitivity we see today. Red Fife may be more easily digestible and tolerated by those with gluten sensitivities.

The taste of the Red Fife goods are more complex than common Hard Red Wheats and the breads bake up moister, with a cohesive crumb. Especially suited to bread it has a high gluten content that can be used by itself or mixed with low gluten flours (spelt, rye etc) for excellent results.

  • A Heritage Grain with a Rich History: Red Fife is a variety of wheat that was the principal bread wheat in Canada during the late 19th century. It is named after David Fife, the farmer who first introduced it, and is known for its adaptability to a wide range of soil types and climates. This heritage grain, once nearly extinct, has seen a resurgence due to its complex flavor and nutritional benefits, making it a cherished ingredient among artisan bakers and chefs.
  • Nutritional Powerhouse: Red Fife wheat is celebrated not just for its rich, nutty flavor, but also for its impressive nutritional profile. It is a good source of protein, providing all the essential amino acids needed for human health. Additionally, it is rich in fiber, which promotes digestive health, and contains a variety of vitamins and minerals, including magnesium, zinc, and iron. Its antioxidant properties, attributed to its high selenium content, further enhance its health benefits, making it an excellent choice for those looking to enrich their diet.
  • Versatile Culinary Ingredient: Beyond its nutritional benefits, Red Fife wheat offers a versatility that can enrich a wide array of dishes. It can be ground into flour and used in bread, pancakes, and pastries, offering a depth of flavor that is unmatched by modern wheat varieties. Whole Red Fife berries can also be cooked and used as a wholesome addition to salads, soups, and stews, or even as a substitute for rice, providing a delightful texture and boosting the nutritional content of meals. Its revival in the culinary world is a testament to its exceptional quality and taste.

Intact grain can be stored for up to 6 months in a cool dry location, or 1 year in a freezer. Once milled, it can be stored in a cool dry location for 3 months or 6 months in a freezer.
