Durum Wheat Berries

Durum is the hardest of all wheat kernels. Durum wheat is a variety of spring wheat that’s typically ground into semolina and used to make pasta. It can also be ground into a finer flour and used to make bread or pizza dough. Typically high in protein, but lower in gluten content, Durum Semolina and Couscous are both made from this wheat. High in protein, it's ideal for pasta. 

Durum is used less than other wheat for breadmaking, though it has special applications. Durum wheat is the most nutritious wheat, containing a good amount of protein, potassium, niacin, folate, protein and magnesium. When ground into flour and mixed with water it forms a very stiff dough.

Durum wheat

Today we planted the durum wheat one thousand Kms north of you. It looks like a hot summer ahead so we hope to get a crop to continue our Wheat Weaving projects. Durum has the black beards which enhance our creations. I will send a photo. Thank you. I was so pleased to find a durum producer. Iris.
