Purple barley, also known as black barley, is a type of barley that is distinguished by its deep purple-black color. It is a whole grain that is a good source of fiber, vitamins, and minerals, and is commonly used in a variety of dishes such as soups, stews, salads, and even baked goods.

One of the unique features of purple barley is its high anthocyanin content. Anthocyanins are a type of flavonoid, which are natural pigments that give fruits and vegetables their bright colors. These compounds also have antioxidant properties, which may help protect against chronic diseases such as heart disease, cancer, and Alzheimer's disease.

In addition to its nutritional benefits, purple barley is also known for its nutty, slightly sweet flavor and chewy texture. It can be prepared in much the same way as traditional barley, but may require a slightly longer cooking time due to its denser texture.

Overall, purple barley is a nutritious and flavorful whole grain that can be a great addition to a healthy diet. It is particularly appealing to those who are looking for alternative grains or want to add more color and variety to their meals.

Beautiful colour !

I love their chewy texture. I cooked them in my Instant Pot after a long soak for 4 hours.

Primordial Perfection

I bought this for viking and anglo saxon cooking. It makes a great pottage. I made up a big batch in my rice cooker and divided it in two. Half was sweet, with cinnamon, nutmeg and honey. The other half was savory with leeks, sage, bear garlic and pepper. Both turned out perfectly.
