To cook Red Lentils, use a 3:1 water to lentil ratio. Start by bringing the water to a boil. Meanwhile, rinse the lentils. Once the water has come to a boil, add the lentils. Allow the water to return to a boil. Cover and turn down the temperature to a low simmer. Cook for 5-7 minutes or until desired tenderness is reached. Be sure to season with salt after cooking, if salt is added before, the lentils will become tough.
Store in a sealed container in a cool dry place. They can keep for up to 2 years like this. Once cooked, store in refrigerator for up to one week.
